About me

Who I am, where I’ve worked, and how to tell me apart from other people named Jon Peck.

Who is Jon Peck?

I’m a restaurant operator and the founder of RANGE Hospitality Advisory, based in Dallas–Fort Worth. I spent twenty years in restaurant operations as a General Manager, Regional Director and Vice President of Operations, and as Chief Operating Officer of two Dallas restaurant groups, FB Society and Vandelay Hospitality Group. My full record is on the About page.

What did you do before RANGE?

I was Chief Operating Officer of FB Society, the Dallas group behind Whiskey Cake, Mexican Sugar and Sixty Vines, where I ran four of its concepts and opened three Haywires in twelve months.

Before that I was at Vandelay Hospitality Group, now Vandelay Companies, where I joined as Vice President of Operations and, as Chief Operating Officer, built the operating systems and leadership bench that took a founder-led business from $17M to $75M in three years, with twelve openings across six concepts.

Earlier I was a General Manager and then a Regional Director at Del Frisco’s Restaurant Group, and I started at Darden’s Seasons 52 as a team member and worked up to Managing Partner.

Where are you based?

Dallas–Fort Worth. RANGE works with restaurant groups nationally, and I’ve run restaurants in Nashville and Atlanta as well as Austin, Houston and San Antonio. When the work needs time on site, I go to the restaurants, and I’m available to travel for the keynote.

What RANGE does

The firm I founded, the operations it takes on, and the order every engagement runs in.

What does RANGE Hospitality Advisory do?

RANGE builds restaurant brands people love, and makes them run at five, ten or twenty locations without losing their identity. Each engagement puts a senior operator beside your team.

How is RANGE different from a traditional consultant?

When a firm passes your work from person to person, the accountability thins with every pass. At RANGE it does not pass: I’m the senior operator on the weekly call for the length of the engagement, and I answer for the result.

What is the RANGE Framework?

The five steps every engagement runs in, in a fixed order so a symptom never gets mistaken for the problem:

  1. Recognize what’s real
  2. Align execution to intent
  3. Narrow focus on core drivers
  4. Generate momentum through process
  5. Elevate team capability

The first call starts at Recognize, with your own numbers.

Who runs it

Engagements and fees

The shapes an engagement takes, what a fractional COO is, how fees are set, and the order the work runs in.

What is a fractional COO?

A fractional COO, sometimes called a part-time COO, is a senior operator who holds the chief operating officer’s role in your group on a set cadence, accountable for the operation and working inside the business from the first week. At RANGE, that operator is me.

How are fees set?

By the scope and the value of the outcome, agreed before the work starts, never by the hour or the day. A retainer is ongoing access to senior judgment, not a count of visits. The first call is free; discovery after it is paid, and its written read comes before any longer commitment.

How an engagement runs

  1. CallFree, thirty minutes: what’s breaking, what you’ve already tried, and whether I’m the right help.
  2. DiagnosisPaid discovery, from the P&L to the pre-shift meeting, read back in writing.
  3. MeasureAgreed first: what we’re solving, and the number that says it’s done.
  4. WorkThe heaviest fix first, with an owner and a date, read every week.
  5. HandoffYour managers run the weekly numbers meeting on their own.

The keynote

Built, Not Born: who it’s for, the format, and how to book it.

Do you speak at events?

Yes. I offer one keynote, Built, Not Born: how restaurant brands scale without losing their identity. It comes from twenty years of operating, not from a speaking résumé. It is for restaurant leadership teams, franchise and licensee conventions, hospitality and restaurant associations, and operator and founder summits.
