Jon Peck, Restaurant operator, Dallas–Fort Worth, Founder, RANGE Hospitality Advisory. I’ve spent twenty years running restaurants.

I founded RANGE Hospitality Advisory to help restaurant operators scale their brands to five, ten, or twenty locations without losing their identity. I work with each brand to find the two or three things holding the business back and fix them alongside the team. What I leave behind is a business that runs without me.

Twenty years, nearly every role.

I held the roles that own a number: General Manager, Regional Director, Vice President of Operations, and Chief Operating Officer, in full-service, fast-casual, and high-volume restaurants from $2.5M to $18M+ a year.

I started RANGE to do the same job from the outside. Every engagement is scoped to an outcome we agree on before it starts, and I am accountable for the result.

The talk built on this record: Built, Not Born

  1. 2025 to now

    Founder, RANGE Hospitality Advisory

Dallas–Fort Worth, working nationally. Each engagement puts a senior operator beside the team. The shape varies: an advisory retainer, a fractional COO, a plan for the next units, a turnaround or operational due diligence.

  2. 2023 to 2025

    Chief Operating Officer, FB Society

The Dallas group behind Whiskey Cake, Mexican Sugar and Sixty Vines. I ran four of its concepts (Haywire, The Ranch at Las Colinas, Ida Claire and Son of a Butcher) and opened three Haywires in twelve months.

  3. 2019 to 2023

Chief Operating Officer, Vandelay Hospitality Group

Now Vandelay Companies. I joined as Vice President of Operations and built the operating systems and leadership bench that took a founder-led business from $17M to $75M in three years, with twelve openings across six concepts: Hudson House, Drake’s Hollywood, D.L. Mack’s, Brentwood, Anchor Sushi Bar and East Hampton Sandwich Co. I also advised on several others now in the Vandelay portfolio.

  4. 2014 to 2019

Regional Director, Del Frisco’s Restaurant Group

I joined as a General Manager, opening and running a restaurant in The Woodlands, then directed restaurants across Texas, Atlanta and Nashville.

  5. 2006 to 2014

    Managing Partner, Darden’s Seasons 52

I started as a team member and worked up to Managing Partner, running restaurants in Florida as the brand went from a small pilot to a national chain.

“The move is almost never to add more. It’s to get clearer on what matters and stop doing the rest.”

How I work.

What you’re buying is judgment.

  • The work follows the problem.

A problem rarely shows up where it starts. Labor that runs over at the new unit is often a hiring mistake at the first one. The plan is drawn around the cause.

  • Engaged on the outcome.

Fees are set by the scope and the value of the outcome, agreed before the work starts. A retainer is ongoing access to senior judgment, not a count of visits. I answer for the result.

  • Your managers keep it running.

When I step back, they run the weekly numbers meeting and the period P&L review, and hold the standards we built together.

The five steps every engagement runs in: the RANGE Framework

Thirty minutes, on your schedule.

Tell me what’s breaking. You leave knowing where the problem is.
